Teriyaki-Grilled shiitake mushrooms from Ozu stuffed with meat
Ingredients
- 6 (130g) shiitake mushroom
- Small green onions for decoration as needed
- 2 perilla leaves for decoration as needed
- [Meat paste] 200g minced pork
- [Meat paste] 2g salt
- [Meat paste] 50g chopped onion
- [Meat paste] 1/3 teaspoon of cumin
- [Meat paste] 1 teaspoon of potato starch
- [Meat paste] 1 egg
- [Sauce] 2 tablespoons each of soy sauce, mirin(sweet sake) and sugar
- [Sauce] 1 tablespoon each of sake and water
- [Sauce] Cumin a little
How to make
- 1Cut off the stems of shiitake mushrooms and make lattice-like cuts on the caps. Remove the hard tips of the stems and chop them finely.
- 2Mix all ingredients for sauce well.
- 3Add all ingredients for meat paste in a bowl and knead well until it becomes sticky.
- 4Sprinkle a thin layer of flour (not listed) on the underside of shiitake mushroom cap and stuff with meat paste ”3”.
- 5Heat salad oil (not listed) in the pan, heat over medium heat, and grill shiitake mushrooms of meat paste side for 3 to 4 minutes, then turn over, cover, and grill for another 3 to 4 minutes.
- 6Add the sauce and bring to a boil, quickly simmer both sides, then arrange on a plate. Decorate with perilla leaves and small green onions.
